No-Bake Strawberry Cheesecake


My apology for being absent for a long time.  I think I mentioned it on my last post that I'm taking more responsibility at work now that my priorities at home has also changed.  I also don't feel like making desserts or sweet treats for a while so this break is much needed.

My son also has an early bird class which makes my day is longer than usual.  I'm in bed by 10 most nights and I believe sleep is one of things I won't miss out.  A well rested wife and mommy is a much appreciated person during the day :)

This month I finally feel the urge to start baking again.  But the first thing I made is actually involves little time in the oven.  I had a slice of cheesecake on my church potluck and I wanted to eat cheesecake at home.  I don't think I've ever made no-bake cheesecake before that this time is the right time to try it.  Strawberries have started coming in the stores so automatically it's the fruit that I fancy putting in the no-bake cheesecake.


The crust is made of chocolate graham crackers with some oats and brown sugar.  It tastes very yummy; actually this combo strawberry and chocolate is super delicious.  The addition of whipped cream and extra strawberries on top makes it even better.  This actually reminds me of strawberry ice cream without the brain freeze!

Now the fresh strawberry slices are mixed with melted marrionberry jam because I run out of my strawberry jam.  They taste just fine with it, it's just when photographed it looks a little funny with those little seeds of marrionberry.  This also told me that I need to make more strawberry jam in a month or two.

No-Bake Strawberry Cheesecake


Serves 10


Crust:
9 whole chocolate graham crackers
1/2 cup old-fashioned oats
3 tablespoons (packed) golden brown sugar
1/2 teaspoon salt
5 tablespoons unsalted butter, melted
1 teaspoon vanilla extract

Filling:
1/4 cup water
1 tablespoon unflavored gelatin (from 2 envelopes)
1 1/2 8-ounce packages Philadelphia-brand cream cheese, room temperature
1 cup heavy whipping cream
1 cup sugar
1 tablespoon fresh lemon juice
3 cups chopped strawberries

Topping:
1 cup chilled heavy whipping cream
1 tablespoon sugar
4 cups fresh strawberries, cut in half
1/2 cup strawberry jam


To make the crust:  Preheat oven to 350F.  Blend graham crackers, oats, brown sugar, and salt in processor until graham crackers are finely ground.  Add melted butter and vanilla; process until moist crumbs form.  Press crumb mixture onto bottom and 1 inch up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides.  Bake crust until deep golden brown, about 12 minutes.  Cool.

To make the filling:  Pour 1/4 cup water into small saucepan; sprinkle gelatin over.  Let stand until gelatin softens, about 15 minutes.  Stir over very low heat just until gelatin dissolves.  Blend cream cheese, cream, sugar, and lemon juice in processor until smooth, occasionally scraping down sides of bowl.  Add berries; puree until smooth.  With machine running, add warm gelatin mixture through feed tube and blend well.  Pour filling into crust.  Cover; chill overnight.

Cut around pan sides to loosen cake; remove pan sides.  Transfer cake to platter.

Topping:  Using electric mixer, beat cream and sugar in medium bowl until peaks form.  Spread cream mixture thickly over top of cheesecake.  Place berries in bowl.  Heat jam in small saucepan over low heat until just melted.  Pour jam over berries; toss to coat.  Mound coated  berries on cream, leaving 1-inch plain border.  Chill cake at least 1 hour and up to 1 day.

Peanut Butter Banana Coconut Cookie Bites


Even though I'm not allergic to anything or following a particular diet, I sometime like to make healthy food options for my family.  Especially since I'm not getting younger anymore, it's best to keep me healthy by not overindulging in rich foods, right?  

When the healthy food has great taste, the right texture, and easy to make, I'd say yes to making it part of my baking/cooking repertoire.  Just like these cookie bites, these are made from wholesome and natural ingredients; and what's more they're taste awesome.  



When my husband or son comes home from work or school, they like to have something to nibble to tide the hunger until dinner time.  I think these bites are the perfect answer for that call.

I've tasted a variation of this cookies and decided to make it based on the ingredients I have on hand.  The original recipe is called Toasted Coconut Quinoa Breakfast Cookies by Simply Quinoa.  Her blog has a variety of recipes using quinoa that taste and look great.  Thanks for the recipe!

So instead of quinoa flakes, I made these with part flax meal and part oat bran.  The cookies have a darker color but taste-wise, they're equally as yummy.  I also swapped cashew butter for natural, crunchy peanut butter; my family just love peanut butter more.  As for size, they're bite-size products that is great for portion control snacking.  


It's time for you to make these and decide if they're a keeper!


Peanut Butter Banana Coconut Cookie Bites


Makes about 24 small cookies


1/2 cup natural, chunky peanut butter
1/4 cup honey
1 medium ripe banana, mashed
1 egg
1 teaspoon vanilla extract
1/2 cup oats
1/4 cup flax meal
1/4 cup oat bran
1 teaspoon baking powder
Pinch of salt
1/2 cup coconut flakes, toasted, let cool
2 tablespoons chia seeds


Preheat oven to 350F.  Line two baking sheets with parchment paper.

In a large bowl, combine mashed banana with peanut butter, honey, egg, and vanilla extract.  Mix it until comes together.  Add oats, flax meal, oat bran, baking powder, and salt; stir.  Fold in toasted coconut and chia seeds.

Using a small scooper (about a tablespoon), drop a scoopful of the mixture into baking sheet until all the mixture is gone.

Bake cookies on center rack for 15-18 minutes or until edges are golden brown.  Remove and let cool on the pan for 5 minutes then transfer to a wire rack and cool completely.

Store in an airtight container.

Oat Crisps with Fresh Fruits and Honey Yogurt


When I made these crips I was expecting it to be good on their own.  Well, yeah, I wasn't wrong.  I ended up eating them as snacks because they were so addictive.  Crispy, crunchy, and caramel-y, I just love these!

If you want to eat these for breakfast, the simple way to do is to grab yogurt--honey flavored is my favorite--and fresh fruits for a feel good sustenance in the morning.  This recipe is simple and irresistible which what I like from the book by Emily Luchetti, Classic Star Desserts.  I've been going through my baking book collection and trying out recipes this summer when I had a more leisurely time for baking and cooking.  So far I've found very good recipes and I'm very pleased.  I hope I can continue the baking well into the busy school and work year.  Fingers crossed!


Oat Crisps with Fresh Fruits and Honey Yogurt


Serves 6


1 1/4 ounces (2 1/2 tablespoons) unsalted butter, melted
1/4 cup firmly packed dark brown sugar
2 tablespoons granulated sugar
2 tablespoons dark corn syrup
1 cup old-fashioned rolled oats
1 pint blueberries
4 medium peaches, sliced rather thinly
1 cup yogurt--any flavor you like

Preheat the oven to 350F.  Line 2 baking sheets with parchment paper.

In a bowl, combine the butter, brown sugar, granulated sugar, and corn syrup and stir until blended.  Stir in the oats, mixing well.

To form the crisps, drop the oats mixture, one tablespoon per cookie, onto the prepared baking sheets, spacing them about 2 1/2 inches apart.  Bake, rotating the baking sheets 180 degrees at the midway point, until golden brown and bubbly, about 15 minutes.  Let cool for 5 minutes on the baking sheets.  Then, using a metal spatula, transfer the crisps to a large flat plate to cool.

To serve, divide blueberries, peach slices and yogurt among individual plate and place 2 oat crisps alongside or on top of each serving.
